Recipe of the week 1: Oatmeal cookies (овсяное печенье)

I decided to start a new rubric where I'll post 1 new recipe I cooked that week. I hope it'll force me to try more interesting food combinations and to write here more as well.

Today is my first week and the first recipe I want to share with you are these oatmeal cookies from Jea. They are literally the best I've ever tried and plus they are incredibly easy to make. so let's jump right into it.
So to make these cookies we'll need:

  • 100g of butter
  • 120ml of sugar
  • 1 egg
  • 1tsp of vanilla sugar
  • 1tsp of ground cinnamon
  • 180ml of flour
  • 1/2 tsp of baking soda
  • 360ml of oatmeal flakes
  • 120ml of raisins
  • 120ml of pecan nuts halves
Preheat the oven to 395F (200C).
Mix softened butter with sugar and add an egg - mix well.
In the separate bowl mix dry ingredients: flour, cinnamon, vanilla sugar, and baking soda.
add dry ingredients to the main bowl slowly.
At the end add oatmeal flakes, raisins and pecans. Mix well.
spray cooking sheet with baking oil or line it with parchment paper. Form cookies with table spoon.
cook for 10-15 min. After removal from the oven let cookies cool down under the towel. When cooled place cookies into the bowl and store for 1-2 days. After this time cookies will become crispy on the outside and perfectly soft inside.
